TRAIL MIX BREAD

This is delicious sliced, toasted lightly and served with honey or peanut butter. You can vary the combinations of nuts and seeds to suit your preferences.

1 egg
1 cup milk
1/3 cup vegetable oil (virtually any oil will do except olive oil)
1 cup whole wheat flour
1 cup white flour
1 cup brown sugar
1/3 cup chopped nuts (e.g. walnuts, almonds, pecans)
1/3 cup raisins or dried cranberry pieces
2 tbsp wheat germ
2 tbsp sesame seeds
2 tbsp poppy seeds
2 tbsp flax seeds
2 tbsp sunflower seeds (raw or toasted but preferably unsalted)
1 tsp baking powder
1 tsp baking soda
½ tsp salt


1. Preheat oven to 350ºF.
2. In a large bowl, whisk together egg, milk and oil. Mix remaining ingredients separately. Add dry ingredient to egg mixture, stir to moisten.
3. Pour into a lightly greased loaf pan and bake for about 1 hour or until tester inserted in the centre comes out clean. Cool on a wire rack.

Makes 1 loaf
