HAWAIIAN MACADAMIA NUT-CRUSTED MAHI MAHI

Mahi Mahi is a moist, flaky, mildly flavoured fish. A native of the Pacific, it is a favourite among seafood lovers world-wide.

4 Mahi Mahi filets, 4 - 6 oz each
4 tbsp mango chutney (peach chutney also works well)
½ cup plain breadcrumbs
½ cup macadamia nuts, finely chopped
3 tbsp vegetable oil
salt and pepper to taste


1. Season fish with salt and pepper. Brush top of filets with mango chutney.
2. Combine breadcrumbs and macadamia nuts. Dredge the top of the fish through the crumb/nut mixture, patting it down into the flesh.
3. Preheat oil in a frying pan over MEDIUM heat. Place fish, crust side down and cook for 3 minutes or until golden brown. Turn fish over and continue cooking for an additional 3 to 5 minutes.
