HAWAIIAN MACADAMIA NUT-CRUSTED MAHI MAHI
Mahi Mahi is a moist, flaky, mildly flavoured fish. A native of the Pacific, it is a favourite among seafood lovers world-wide.
4 Mahi Mahi filets, 4 - 6 oz each
4 tbsp mango chutney (peach chutney also works well)
½ cup plain breadcrumbs
½ cup macadamia nuts, finely chopped
3 tbsp vegetable oil
salt and pepper to taste

Season fish with salt and pepper. Brush top of filets with mango chutney. |

Combine breadcrumbs and macadamia nuts. Dredge the top of the fish through the crumb/nut mixture, patting it down into the flesh. |

Preheat oil in a frying pan over MEDIUM heat. Place fish, crust side down and cook for 3 minutes or until golden brown. Turn fish over and continue cooking for an additional 3 to 5 minutes. |
