CUBAN-INSPIRED CITRUS HERB CHICKEN
1 whole chicken cut into 8 pieces
Citrus Herb marinade (below)
1 large onion, cut into rings
enough cooked rice for 4 to 6 people (optional)
3 tbsp chopped cilantro
CITRUS HERB MARINADE
1 cup orange juice
¼ cup fresh lime juice (approximately 2 limes)
¼ cup olive oil
3 cloves garlic, minced
1 tbsp chopped cilantro
2 tsp salt
1 tsp cumin
1 tsp oregano
freshly ground black pepper to taste

Combine all ingredients for marinade. Place chicken pieces into a resealable plastic bag and pour marinade over chicken. Seal bag and let marinate up to 8 hours. |

Preheat oven to 375º F. Place the onion rings on the bottom of a roasting pan. Place chicken pieces, skin side up, on top of the onions and pour marinade over top. Roast for about 1 hour. Let stand for 10 minutes before serving. |

Serve over a bed of rice and sprinkled with the remaining cilantro. |
